One of our favorite activity this season is picking the lemons from our tree. We are lucky to have a huge lemon tree in our tiny garden under the house.
Lemons have numerous health benefits, and most importantly they are an excellent source of Vitamin C, which helps the immune system keep colds and flu away.
Now that we have lots of lemons in our house, the kids enjoyed a glass of lemonade and asked for our special lemon cake, which we prepared together.

This recipe makes the cake above, which serves around 15-20 pieces.
– 200 g unsalted butter, at room temperature
– 2 cups granulated sugar
– 4 eggs
– 1/3 cup grated lemon zest (around 7 lemons)
– 3 cups of flour
– 1 teaspoon baking powder
– 1 teaspoon salt
– ¾ cup milk, at room temperature
– 1 teaspoon pure vanilla extract
– ¼ cup freshly squeezed lemon juice
Preheat the oven to 180 degrees C. Grease and flour your cake pan.
Cream the butter and the sugar in a bowl with an electric mixer until fluffy (about 5 minutes). Add the eggs, 1 at a time, and the lemon zest.
In another bowl, mix together the flour, baking powder, and salt. In a third bowl, combine the lemon juice, the milk, and the vanilla. Add the flour and milk mixtures alternately to the first bowl, beginning and ending with the flour.
Pour the batter into the cake pan. Bake for 45 min to 1 hour, or until a toothpick inserted into the center comes out clean.
Take it out from the oven, allow to cool, and enjoy it with a freshly squeezed lemonade.
